Our iPad register only accepts credit cards. We have the "Automatically print receipt" function off. But we can't figure out how to make printing a receipt optional. Any ideas?

For the iPad, there's only the ability to print a receipt for each transaction or not print the receipt for any transitions.
This feature is called disable Auto-print and can be found in the general options of your settings.
