Is it possible to query the items endpoint, or any other for that matter, for populated fields i.e. Images?
So return all items with Images?

You can check the additional relations of an Item and use this in your query. Here https://developers.lightspeedhq.com/retail/endpoints/Item/ you can find all additional relations.

I'm not sure I explained myself well enough.
What I am trying to do is only return items if Images.Image exists. So if no images don't return the items.
I think the example above returns all items with Images if they exist.
P.s. Just out of interest, so no panic.

Unfortunately not, you can't use that kind of logic as a parameter. You'll need to do that in your code. 😁
