Order Status attribute in API response.

I've already asked this question, can I have an answer please.

As per the documentation., https://developers.lightspeedhq.com/ecom/endpoints/order/

the order may have various status , starting from 'new, offer, etc', but the moment I create an order, its status reflects as either'processing_awaiting_payment' , or 'processing_awaiting_shipment/pickup'. Can you confirm when the order status 'new/offer/completed' comes into play, because as soon as order is shipped - the status changes to either completed_shipped/completed_pickedup.

Can I please have some clarification on this?
