You can only get the labour information with API, not update it:

Thank you Ali. I was hoping there was simpler way. When I worked at another retail store, even the employees adjusted their own hours as mistakes happen and fixing errors often take up a lot of time.

You have posted in Restaurant L-Series, so I was thinking you're using L-Series.
In case you're using our Retail product, you are able to update the EmployeeHours:
