Hi - we are already signed up for a full Lightspeed account - however I would like a demo / dummy company where I can try things out without screwing up our live data - does this exist? Can we get an extra account just for that? I suspect others would find that really useful too.

API key were deprecated last year, if you want to use the API you need to request an OAuth client here.
