Item and ItemMatrix vs Product and Variant

Hello everyone,
So here is the situation I'm in.
We've got a eCom shop, with Products and Variants. We also got an Retail shop.
Can someone explain how I should look at Item and ItemMatrix in Retail?
We are building a middleware to try and manage products across both eCom and Retail. Since we've got Products with Variants, how should I handle this on Retail? I assume Variants roughly translate to Items on Retail but I need to be able to keep track of the Product it used belongs to when syncing it to the middleware. Lightspeed eCom provides Metafields to store additional data, but I can't seem to find something like it.
